Apple Walnut Muffins

This is a classic that will impress anyone who eats it. Apple Walnut Muffins. Mmm...good.
  • 1 1/2 cups Flour
  • 2 teaspoons Baking Powder
  • 1 cup Walnuts (chopped)
  • 2 Eggs
  • 1 1/2 teaspoons Ground Cinnamon
  • 1/4 teaspoon Ground Nutmeg
  • 1/3 cup Butter (melted)
  • 1/2 cup Wheat Gluten (or Soy Flour)
  • 1/4 teaspoon Salt
  • 2/3 cup Apple Juice, frozen concentrate
  • 1 teaspoon Vanilla Extract
  • 2 medium Apples, peeled (chopped)
  1. your oven to 350F and get a muffin tin ready with non-stick spray. You can also use paper liners. Set this aside for later.
  2. Combine your dry ingredients in a med bowl. Add in eggs, melted butter, apple juice concentrate, and vanilla. Mix this until dry ingredients are just moistened.
  3. Stir in the walnuts and apple.
  4. Pour the batter into your cups (fill about 3/4 of the way).
  5. Bake for 25 minutes (using the toothpick check method to check when ).
  6. Let stand on wire rack for 5 minutes or so. You can eat these warm (I do!) or let them fully cool. Another note, you can keep these in the freezer and they will hold up the taste for months.
