
Apple Streusel Coffee Cake

This is a classic recipe that will impress anyone who eats it. Apple Streusel is a godsent. Not exactly "healthy" but who cares? Hope you like it. - 1 1/4 c light brown sugar, packed
- 1 1/4 c granulated sugar
- 3/4 c all-purpose flour
- 3 medium apples, Granny Smith or Golden Delicious (peeled, cored, and diced)
- 1 c coarsely chopped pecans
- 1/2 c butter, cold, cut into small pieces
- 3/4 c butter, room temperature
- 2 tspns cinnamon
- 3 1/4 c all purpose flour
- 1 1/2 tspn baking powder
- 3/4 tspn baking soda
- 3 eggs
- 2 tspn vanilla extract
- 2 cups vanilla yogurt (16oz)
- Grease & flour a 10inch tube pan or bundt cake pan.
- In a medium bowl, mix the brown sugar, flour, cold butter, cinnamon.
- Mix with a fork until it is crumbly and blended well. Now stir in the pecans.
- In a bowl, mix the flour, baking soda, and baking powder.
- In a large mixing bowl, use an electric mixer on cream butter, and sugar until light and fluffy.
- Beat in the eggs. Make sure to beat well, and only add one egg at a time.
- Now beat in the vanilla extract and vanilla yogurt. On a low speed mixer, beat in flour mixture just until blended.
- Spoon in about 3 cups of the batter into the pan and sprinkle with 1/4cup of streusel mixture and apples. Then add another 1/2cup of the streusel mixture ontop. Finally if you have any streusel left, add it to the top. Press the streusel down into the batter (lightly mind you).
- Bake for 1 hour on 350F heat. Use the toothpick test to determine stop time. Let cool before serving! And enjoy the recipe.
