Apple Streusel Coffee Cake

This is a classic that will impress anyone who eats it. Apple Streusel is a godsent. Not exactly "healthy" but who cares? Hope you like it.
  • 1 1/4 c light brown , packed
  • 1 1/4 c granulated sugar
  • 3/4 c all-purpose flour
  • 3 medium apples, Granny Smith or Golden Delicious (peeled, cored, and diced)
  • 1 c coarsely chopped pecans
  • 1/2 c butter, cold, cut into small pieces
  • 3/4 c butter, room temperature
  • 2 tspns cinnamon
  • 3 1/4 c all purpose flour
  • 1 1/2 tspn baking powder
  • 3/4 tspn baking soda
  • 3 eggs
  • 2 tspn vanilla extract
  • 2 cups vanilla yogurt (16oz)
  1. Grease & flour a 10inch tube pan or bundt cake pan.
  2. In a medium bowl, the brown sugar, flour, cold butter, cinnamon.
  3. Mix with a fork until it is crumbly and blended well. Now stir in the pecans.
  4. In a bowl, mix the flour, baking soda, and baking powder.
  5. In a large mixing bowl, use an electric mixer on cream butter, and sugar until light and fluffy.
  6. Beat in the eggs. Make sure to well, and only add one egg at a time.
  7. Now beat in the vanilla extract and vanilla yogurt. On a low speed mixer, beat in flour mixture just until blended.
  8. Spoon in about 3 cups of the batter into the pan and sprinkle with 1/4cup of streusel mixture and apples. Then add another 1/2cup of the streusel mixture ontop. Finally if you have any streusel left, add it to the top. Press the streusel down into the batter (lightly mind you).
  9. Bake for 1 hour on 350F heat. Use the toothpick test to determine stop time. Let cool before ! And enjoy the recipe.
