
Apple Pancakes

Totally simple recipe that has been an old standby for ages. Simple and delicious. Your kids will freak out over how good it is. And you actually get them to eat some fruit. - 1/2 c Sugar
- 3 c Apples (shredded)
- 1 tsp Baking Soda
- 1 tsp Salt
- 1 tsp Cinnamon
- 2 tsp Vanilla
- 1 1/2 c Flour
- 2 1/2 c Low-Fat Sour Cream
- 2 Eggs (slightly beaten)
- In a big bowl, combine, sugar, flour, baking soda, cinnamon, and salt.
- In a medium bowl, combine apples, vanilla, eggs, ans sour cream. Add apple mix to the dry ingredients and stir up until just blended.
- Grease a griddle and put over medium heat.
- Put 1/4 cup of batter onto the griddle for 1 cake. Cook until bubbles form and the tops look nice and dry. Turn the cake and cook until "golden brown".
